Today gives you a sneak peak into the cookbook. This is Brion’s Favorite! I love to cook and bake for my husband, and he loves to eat! It makes for a great combination.
Oatmeal, Peanut Butter, Chocolate Chunk Cookies
Ingredients: 1 cup flour, 1 cup old fashioned oats, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1/2 cup butter, softened, 1/2 cup sugar, 1/2 cup packed brown sugar, 1/2 cup creamy peanut butter, 1 egg, 1 1/2 teaspoons vanilla, 1 cup chocolate chunks
Directions: Heat oven to 375 degrees.
Mix first 5 ingredients until blended. Beat butter, sugars and peanut butter in large bowl with mixer until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, mixing well after each addition. Stir in chocolate.
Drop heaping tablespoons of dough, 2 inches apart, onto baking sheets. Bake 10 to 12 minutes or until lightly browned. Cool 1 minute on baking sheet; remove to wire racks. Cool completely.
Makes 2 dozen
