Edna, my former mother-in-law, was an amazing cook and baker. I loved her zest for life and she lived it to the fullest! I love this picture of her at the oven in the kitchen on their farm in Prairie Hill near Brenham, Texas. This recipe for pear pie is simple, but delicious. I miss her but having the opportunity to enjoy her many recipes keeps her memory alive.
Edna’s Pear Pie
4 cups peeled and sliced pears, 1/2 cup sugar, 3 tablespoons flour, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 3 tablespoons pear juice, 1/8 teaspoon lemon juice and 1 pie crust
Grease and prepare pie dish with crust. Mix above ingredients and pour into prepared pie crust. Bake at 350 degrees for 20-30 minutes until lightly browned.
