Chocolate Cheesecake

It’s Monday!!  Chocolate Cheesecake anyone?  This photo shoot was taken in downtown Brenham at Lydia’s House.  Can’t wait to share it with you in my new cookbook.  Here is the recipe:

Crust:  1 cup crushed chocolate cookies (I use chocolate teddy graham cookies), 3 tablespoons sugar and 3 tablespoons melted butter

Mix together and press on bottom of greased 9″ spring-form pan and set aside.

Filling:  12 oz. semi-sweet chocolate chips, 2 (8 oz.) cream cheese, 3/4 cup sugar, 2 eggs, 1 teaspoon vanilla and 2 tablespoons flour

Melt chocolate chips and set aside.  Beat together cream cheese, sugar, eggs, vanilla and flour.  Fold in melted chocolate.  Pour into prepared crust.  Bake at 350 degrees for 40-45 minutes until set.  Turn oven off and allow cheesecake to cool in oven, this will prevent the cheesecake from falling.
