These are Grandma Broz’s refrigerator cookies. This recipe is not in the Simply.Southern cookbook so I thought I would share it. I made these today and they are so simple to make and yummy! I can remember my grandmother making these all the time.
Ingredients:
1/2 cup shortening, 1 cup brown sugar packed firmly, 1 egg-beaten, 1 1/2 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, 1 teaspoon vanilla, 1/2 cup pecans, chopped
Directions:
Mix all ingredients together except pecans. Form dough into a roll approximately 10 inches long and refrigerate for 30 minutes. Slice dough into approximately 1/4″ slices and top each slice with pecans, press pecans down slightly into dough.
Bake at 350 degrees for 8-10 minutes or until golden brown.
Yield: 3 dozen
