4-H Cookbook Class


Enjoyed sharing with the Food & Nutrition 4-H group of kids some baking and cooking tips.  I gave them some fun tips for cooking and baking in which they won prizes which made it super fun!!  A simply recipe was made from the Simply.Southern cookbook.  These kids are awesome!!!  I was really impressed with their knowledge and this 4-H program is really great for kids.  I am always impressed with 4-H and all the things they offer for kids!


Kids Cookie Camp Contest


I will be giving away a Kids Cookie Baking Camp for 3 Kids!!  Each kid will receive a monogrammed apron, a signed cookbook and get to take home some yummy cookies!  I will be teaching them how to make homemade cookies!  To enter go to our Facebook Page Simply.Southern and like the post and tag a friend.  Drawing will be held on Friday, March 1st!!  GOOD LUCK!!




College Cooking 101


This week I enjoyed cooking with these high school seniors set to go to college this fall.  This was a class I offered as a contest on my Facebook page and was a drawing won by Anna Finke.  They each received a crock pot and a Simply.Southern cookbook.  I came up with a 7-10 meal plan for them using recipes from my cookbook and also set up a grocery list to help to plan when shopping for the items needed to make the recipes.  I wish them much success as they graduate from high school and attend college this fall!

Banana Bread with Dark Chocolate


Enjoy this yummy treat!

Banana Bread with Dark Chocolate Chips and Pecans

This recipe is very easy and we love how moist the bread tastes and with a sweet treat of dark chocolate!




1 stick unsalted butter (room temperature)
1 cup brown sugar, packed
1 large egg
3-4 ripe bananas
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup dark chocolate chips
½ cup chopped pecans, optional


Preheat oven to 350 degrees. Grease a 9X5 loaf pan. In a large bowl, cream butter and sugar together for about 2 minutes until smooth. Whisk in the egg then add the mashed bananas and vanilla. Mix until well combined. Add the flour, baking soda, baking powder, and salt. Mix until well combined. Fold in the chocolate chips and pecans.

Pour mixture into the loaf pan. Bake 55-65 minutes until a knife inserted in the center of the loaf comes out clean.
