Banana Bread with Dark Chocolate

Banana Bread with Dark Chocolate Chips and Pecans

This recipe is very easy and we love how moist the bread tastes and with a sweet treat of dark chocolate!

 

 

Ingredients:

1 stick unsalted butter (room temperature)
1 cup brown sugar, packed
1 large egg
3-4 ripe bananas
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup dark chocolate chips
½ cup chopped pecans, optional

Directions:

Preheat oven to 350 degrees. Grease a 9X5 loaf pan. In a large bowl, cream butter and sugar together for about 2 minutes until smooth. Whisk in the egg then add the mashed bananas and vanilla. Mix until well combined. Add the flour, baking soda, baking powder, and salt. Mix until well combined. Fold in the chocolate chips and pecans.

Pour mixture into the loaf pan. Bake 55-65 minutes until a knife inserted in the center of the loaf comes out clean.

Simply.Southern donates to Adam’s Angels Ministry

Yesterday we held a book signing at the Independence Coffee and Tea Market in Brenham.  We had a great turn out and were able to deliver our Valentine Gift Sets as well.

Thank you to Christi Bond and her company, Independence Co., for allowing us to do a book signing at the coffee and tea market.  It really is a first class place that is quaint, cozy and fun to meet and greet family, friends and customers.

We were so excited to be able to make another donation in the amount of $1,500 to Heather Thielemann, representative for Adam’s Angels Ministry.  We are grateful for the opportunities God has blessed us with to be able to support such a worthy cause.

Thank you to everyone who continues to support the cookbook, Simply.Southern, and I pray that it is a blessing to many.

I am looking forward to some more fun planned ideas to promote this cookbook in the near future!!

A book signing will be held this Saturday, February 2nd from 10:00 am – 12 Noon at Independence Coffee Co. and Black Truck ’48 Coffee and Tea Market located at 2805 US 290 in Brenham, Texas.  All books are $25 each and $5 from each book will be donated to Adam’s Angels Ministry.

Slow Cooker Vegetable Soup

I tried a new vegetable soup and cooked it the best way-in a slow cooker (crock pot).  What I like about this soup is that it is easy to put together and then just let it cook.  You don’t feel guilty about having a second bowl because it’s filled with delicious vegetables!  Enjoy!

A great recipe for these cold winter days!

Ingredients:
4 thick-cut bacon slices, cut into ½-inch pieces
1 ½ pounds baby Yukon Gold potatoes, halved
1 medium onion, chopped
3 medium carrots cut ¼-inch thick slices
1 cup dry navy beans
2 medium parsnips cut ¼-inch thick slices
2 celery stalks cut ¼-inch thick slices
6 cups chicken broth
1 tablespoon minced garlic
½ teaspoon black pepper
¼ teaspoon salt
3 cups chopped curly kale (1 bunch)
1 tablespoon lemon juice

Directions:

Cook and crumble bacon.

Place potatoes, onion, carrots, beans, parsnips, celery, broth, garlic, pepper, salt, kale, lemon juice, and bacon in a 5 to 6-quart slow cooker. Cover and cook on low until potatoes and beans are tender, 5 ½ – 6 hours.

Dark Chocolate Brownies

                       Dark Chocolate Brownies

I found a new recipe that is really good!  I rarely find brownie recipes that I like, but this one hit the spot.  I hope you like baking this one!  #southernliving

 

 

Ingredients:

3 (4 oz) bittersweet chocolate bars, chopped
1 cup unsalted butter
4 large eggs
¾ cup granulated sugar
¾ cup packed light brown sugar
3 tablespoons bourbon
2 tablespoons instant espresso granules
1 ½ cups all-purpose flour
½ teaspoon salt
3 (4 oz) semisweet chocolate bars, chopped, divided
1 teaspoon flaky sea salt

Preheat oven to 350 degrees. Coat a 9X13 pan with baking spray and flour. Bring a medium pot with 1-inch water to a simmer over low. Set a medium size glass bowl over pot. Add chopped bittersweet chocolate and butter to bowl; cook, stirring occasionally, until melted, about 2 minutes. Remove from heat; cool slightly, about 10 minutes.

Whisk eggs, granulated sugar, brown sugar, bourbon, and espresso granules into cooled chocolate-butter mixture until well combined. Stir in flour and salt until combined. Pour half of the batter into prepared pan. Sprinkle with 1 cup of the chopped semisweet chocolate. Top with remaining batter, smoothing with spatula. Sprinkle with remaining 1 cup chopped semisweet chocolate.

Bake in preheated oven until center is set, about 25 minutes. Remove from oven; sprinkle with flaky sea salt. Cool completely in pan, about 1 hour. Slice into 32 bars.

Refrigerator Cookies

These are Grandma Broz’s refrigerator cookies.  This recipe is not in the Simply.Southern cookbook so I thought I would share it.  I made these today and they are so simple to make and yummy!  I can remember my grandmother making these all the time.

Ingredients:

1/2 cup shortening, 1 cup brown sugar packed firmly, 1 egg-beaten, 1 1/2 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon salt, 1 teaspoon vanilla, 1/2 cup pecans, chopped

Directions:

Mix all ingredients together except pecans.  Form dough into a roll approximately 10 inches long and refrigerate for 30 minutes.  Slice dough into approximately 1/4″ slices and top each slice with pecans, press pecans down slightly into dough.

Bake at 350 degrees for 8-10 minutes or until golden brown.

Yield:  3 dozen
